Dinner of the Week: Crescent Roll Pocket Sandwiches

I may have mentioned that my husband is a sandwich guy.  If sandwiches are not on the weekly menu, they will be served on the weekends.  That's just how we roll.
The night we ate these little pocket sandwiches, I had actually planned on making a crescent roll ring sandwich.  My daughter loves to bake and come up with new creations.  I saw her looking at the crescent rolls as she set them in rectangles, and then watched as she just started filling them and making pockets.  I vaguely remember seeing this type of sandwich on Pinterest, but the fact that my little girl just "created" them by playing around with the dough made my heart melt.
For 8 pocket sandwiches, you will need:
  • 2 cans of crescent rolls
  • Your favorite meat (we used shaved roast beef)
  • Sliced cheese  (Swiss and provolone were what we had)
  • Herbs and spices, to taste
Start by laying out the crescent rolls in rectangles.  Layer your fillings (have some fun with fillings!), and then close the sandwich by folding it over upon itself and pinching the sides.  

 We sprinkled a few mixed herbs on top to give each sandwich a little extra flavor.  Pop them in the oven at 350 degrees for about 10-13 minutes.  
These sandwiches were GOOD!  And we tailored each sandwich to each family member's tastes.  My kids have already asked when we're going to make these using pizza ingredients!  And wouldn't a grilled cheese and bacon version be good dipped in Tomato soup?!
We rounded out the meal with some roasted broccoli and fruit.  Easy and filling...my kind of meal!

Wednesday:  Rib eye Steaks with Bleu cheese crumbles, garden salad, fruit salad
Thursday:   Omelettes, bacon and sausage links, mini muffins, fruit parfait
Friday:  Pork Steaks, shells macaroni and cheese, mini potato trio - roasted
