Dinner of the Week: Sloppy Joe Sliders

At least once a week we do a "Kid Dinner".  
Kid dinners are usually colorful and messy, and this week's dinner didn't disappoint on either point!

Guys, this one isn't pretty.  It isn't particularly nutritious either.  But it is a crowd-pleaser, and some nights, when work has taken all of your energy (both mental and physical), you just need to have a quick meal that everyone will eat.  That meal, is Sloppy Joe Sliders.
Nothing takes me back to childhood like Sloppy Joe sandwiches.  I love the floppy bun, sweet tangy sauce, and the constant "Plop" of meat the drops each time you take a bite.  As a parent, this meal is easy and CHEAP!   When I was newly married and trying to stick to a small grocery budget, Sloppy Joe sandwiches made quite a few appearances on our monthly menu (did I mention that this meal was ready to be plated in less than 15 minutes?).   You brown up a pound of ground beef (or, as we do in our house, ground turkey), add roughly a half cup of ketchup, a quarter cup of brown sugar, and a few teaspoons of Worcester sauce, then let it simmer until it's all bubbly and caramelized.  If I'm feeling adventurous, I may even add some chopped onion into the meat mixture before adding in the sauce ingredients.  Add some peas and peaches (yes, they're canned...shame me if you must) and you're done.  It may not win any nutritional awards, but the full bellies and messy smiles will make up for it.

Thursday:   Grilled chicken breast filets, Pearl potato trio, Roasted broccoli
Friday:  Baked Ziti casserole, Salad, and Garlic toast
